Ingredients

  • 1 ¾ cups all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • 1 teaspoon cinnamon

  • ½ teaspoon nutmeg

  • ½ teaspoon ground ginger

  • ¼ teaspoon cloves

  • ½ teaspoon salt

  • 1 cup pumpkin puree

  • ½ cup vegetable oil (or melted butter)

  • 1 cup granulated sugar

  • ½ cup brown sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • ¼ cup milk

Optional Topping:

  • Caramel drizzle or powdered sugar


Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.

  • In a medium bowl, whisk flour, baking soda, baking powder, spices, and salt.

  • In a large bowl, whisk together pumpkin puree, oil, sugars, eggs, vanilla, and milk.

  • Gently fold in dry ingredients until just combined.

  • Pour batter into prepared pan and smooth the top.

  • Bake 50–55 minutes, or until a toothpick inserted comes out clean.

  • Cool for 10 minutes, then transfer to a wire rack.

 

  • Dust with powdered sugar or drizzle with caramel before serving.


Notes

Substitute ½ cup applesauce for half the oil for a lighter version.

Add chocolate chips, nuts, or dried cranberries for extra flavor.

Store in an airtight container at room temperature for up to 4 days.
