1 loaf brioche or challah bread, cubed (about 12 cups)

6 large eggs

2 cups milk (whole or half-and-half)

1 cup pumpkin purée

½ cup brown sugar

1 tsp vanilla extract

2 tsp pumpkin pie spice

½ tsp cinnamon

¼ tsp nutmeg

Topping:

½ cup brown sugar

½ cup flour

1 tsp cinnamon

½ cup butter, cold and cubed
Instructions

Grease a 9×13-inch baking dish. Add cubed bread evenly into the dish.

In a large bowl, whisk together eggs, milk, pumpkin, sugar, vanilla, and spices.

Pour mixture over bread, pressing gently to soak.

In another bowl, mix topping ingredients until crumbly. Sprinkle over bread.

Cover and refrigerate overnight (or at least 2 hours).

Preheat oven to 350°F (175°C). Bake uncovered for 45–50 minutes, until golden.
