Ingredients

  • 1 cup oat flour (or blended rolled oats)

  • ½ cup vanilla protein powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ cup Greek yogurt (plain or vanilla)

  • ¼ cup honey or maple syrup

  • 1 egg

  • 1 tsp vanilla extract

  • ½ cup dark chocolate chips


Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • In a bowl, whisk together oat flour, protein powder, baking soda, and salt.

  • In another bowl, mix Greek yogurt, honey, egg, and vanilla extract until smooth.

  • Combine wet and dry ingredients, then fold in chocolate chips.

  • Scoop cookie dough onto baking sheet, flatten slightly.

  • Bake 10–12 minutes until edges are golden but centers are soft.

 

  • Cool for 5 minutes before enjoying.


Notes

Store in an airtight container for up to 4 days, or freeze for longer storage.

Swap chocolate chips with nuts, dried fruit, or white chocolate.

Adjust sweetness with stevia or monk fruit for a lower-sugar option.
