  • 12 oz fettuccine pasta

  • 1 pound large shrimp, peeled and deveined

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ cup grated Parmesan cheese

  • ½ cup sun-dried tomatoes, chopped

  • 2 cups fresh spinach leaves

Instructions

  • Cook fettuccine according to package directions. Drain and set aside.

  • In a large skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and cook until pink, about 3 minutes per side. Remove shrimp and set aside.

  • In the same skillet, add garlic and sauté until fragrant, about 1 minute.
