  • 4 boneless, skinless chicken breasts

  • 2 tbsp Cajun seasoning (divided)

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 3 garlic cloves, minced

  • 1 small onion, diced

  • 1 cup chicken broth

  • 1 cup heavy cream (or half-and-half)

  • 1/2 cup grated parmesan cheese

  • 2 cups cooked rice (white or brown)

  • Fresh parsley, chopped (for garnish)


Instructions

  • Season chicken breasts with 1 tbsp Cajun seasoning.

  • Heat olive oil in a skillet over medium-high heat. Cook chicken 5–6 minutes per side until golden brown and fully cooked. Remove and set aside.

  • In the same skillet, melt butter. Add onion and garlic, sauté until fragrant.

  • Stir in chicken broth and bring to a simmer. Add cream, parmesan, and remaining Cajun seasoning. Cook until sauce thickens slightly.

  • Return chicken to skillet, coating it in sauce. Simmer 2–3 minutes.

 

  • Serve over rice, spooning extra sauce on top. Garnish with parsley
